What Is a Fougere? The Structure, Explained

A fougere is a fragrance built on the contrast between lavender and coumarin, usually over a mossy or woody base. The name means fern in French. Houbigant dates the family to Fougere Royale in 1882, and the structure still underlies most classic and fresh masculine fragrances sold today.

Fougère is the most important fragrance family almost nobody can define. It is pronounced roughly foo-ZHAIR, it is behind a very large share of the men’s fragrances sold in the last hundred years, and unlike most family names it describes an actual structure rather than a mood. This article explains the structure, the one material that makes it possible, where that material is restricted, and how to recognise a fougère on your own wrist rather than from a box.

What is a fougère, structurally?

Three elements in tension:

  • Lavender at the top: herbal, clean, faintly camphorous and slightly bitter.
  • Coumarin underneath: sweet hay, warm almond, dry tobacco, faintly powdery.
  • A mossy or woody base holding the two together — historically oakmoss, now usually a mixture of woody-amber synthetics with or without a purified moss extract.

The interest is entirely in the first two. Lavender on its own is a soap note. Coumarin on its own is a sweet, slightly dusty hay note. Together they produce something neither is: dry, clean and sweet at once, recognisably groomed rather than floral. One thing to be clear about: no standards body defines a fougère. There is no register, no specification and no threshold. “Fougère” is a trade convention that perfumers and marketers use, and family words on a product listing are written to sell rather than to classify — which is a good reason not to shop by them. What follows is the convention as the trade uses it, not a rule.

Where did the fougère come from?

Houbigant’s own account credits the family to one fragrance. Its page for Fougère Royale states that it was “Created by Master Perfumer Paul Parquet in 1882,” that it “completely revolutionized the world of perfumes,” and that “As well as creating an entirely new fragrance family, Parquet had succeeded in extracting isolated, synthetic molecules from natural, raw materials.”

That last clause deserves care, because the brand’s framing and the chemical record are not quite the same thing. Houbigant says Parquet “derived coumarin from the Tonka Bean in a worldwide premiere.” But coumarin had already been isolated from tonka beans decades earlier: the IARC monograph on coumarin states that “Coumarin was first isolated by Vogel in 1820 by extraction from tonka beans (Dipteryx odorata).” And Perkin published the artificial production of coumarin in the Journal of the Chemical Society in 1868, fourteen years before Fougère Royale.

So the defensible statement is narrower and still remarkable: Fougère Royale is generally credited as the first commercially successful perfume built around a synthetic aroma material, and the material was coumarin. The chemistry was not Parquet’s; the idea of building a perfume on it was. There is also no published formula for the 1882 original — none exists in the public record — so nobody can tell you how much coumarin was in it.

The name is the other thing people get wrong. Fougère means fern, and ferns have essentially no smell. Parquet was not reproducing a fern; he was inventing an imaginary one. That is worth knowing because it sets the pattern for a great deal of what followed: the family is named after a thing that does not smell, by a fragrance built on a material that does not occur that way in nature.

What is coumarin, and where does it come from?

Coumarin, CAS 91-64-5, is a naturally occurring compound that is also made synthetically at industrial scale. The IARC monograph lists its natural sources as tonka beans, sweet clover, sweet woodruff, vanilla leaf, vanilla beans, cassia, lavender and balsam of Peru.

Read that list again and notice lavender on it. The central pairing of the fougère — lavender and coumarin — is not an arbitrary juxtaposition of two unrelated materials. Coumarin occurs naturally in lavender. Parquet’s move was to take something already faintly present in the raw material and amplify it until it became the point. That is one of the more elegant ideas in the history of perfumery and it is almost never explained this way.

On manufacture, the same monograph records that synthetic routes were developed “starting principally from ortho-cresol (Raschig process), phenol (Pechmann reaction) and salicylaldehyde (Perkin reaction),” and that as of 1999 coumarin was made by five companies in China, three each in Japan and the United States, two in France and one each in Germany, Hong Kong and India. On use levels, it states that coumarin “is widely used in hand soaps, detergents, lotions and perfumes at concentrations usually extending from 0.01 to 0.8%.” That is a rare published figure in a field where almost nothing is published, and it is worth holding onto: coumarin does its work at well under one percent.

When a note list says “tonka bean,” coumarin is a large part of what it means. When it says “hay,” “new-mown grass” or “almond,” coumarin is often in the room. See the note pyramid explained for what a note list is actually describing.

Is coumarin restricted?

Restricted, not banned, and the distinction matters because the internet usually gets it wrong.

The IFRA Standard for coumarin is a restriction. Reading the Standard document directly: it is dated to 2020, Amendment 49, it carries the heading “RECOMMENDATION: RESTRICTION,” and for IFRA Category 4 — fine fragrance — the maximum acceptable concentration in the finished product is 1.5 percent. Coumarin also appears as a Restriction in the Standards index published with the 51st Amendment, which IFRA notified on 30 June 2023 and which is the amendment currently in force.

Set the 1.5 percent ceiling next to the 0.01 to 0.8 percent typical use range above and the picture is clear: the restriction sits above ordinary use. That is not a like-for-like comparison, and it is worth saying so: 1.5 percent is an IFRA fine-fragrance limit from 2020, while the 0.01 to 0.8 percent range is IARC’s figure from 2000 for hand soaps, detergents, lotions and perfumes together rather than for fine fragrance alone. A fougère does not need to be reformulated because of coumarin in the way a chypre did because of oakmoss. Two points of caution, though. And coumarin is one of the fragrance substances that must be named individually in an EU ingredient list, which is why you will see the word on a European carton. The European Commission states that 26 fragrance allergens are subject to individual labelling under Annex III of the Cosmetics Regulation, and the SCCS opinion SCCS/1459/11 of 13 to 14 December 2011 lists coumarin, CAS 91-64-5, among them, with the labelling thresholds set at 0.001 percent in leave-on products and 0.01 percent in rinse-off. That is a labelling obligation, not a concentration cap.

How has the fougère changed?

The structure has been rebuilt at least three times, and the eras are audible if you know what to listen for.

Two of those rows connect to work we have already published. The fresh fougère is the structural skeleton of the whole marine-fresh category, and the blue accord explained takes apart the materials that built it. We are not giving launch years for the fragrances that define the later eras, because their houses do not publish them and the years circulating in fragrance databases could not be corroborated. Where a house does publish a date — Houbigant for 1882, Puig for 1973 — we have used it and said so.

How do you tell a fougère from a chypre?

They share a base and differ entirely at the top, which is why people confuse them.

The short version: if the sweetness underneath smells like hay and almond, you are in a fougère. If the sharpness underneath smells like damp earth and bitter bark, you are in a chypre. The chypre family explained takes the other family apart, including what regulation did to it — which is a much bigger story than anything that happened to coumarin.

How do you find a fougère in a catalogue?

Mostly you cannot, and the reason is instructive. Our catalogue has no fragrance-family field. Nothing in a product listing records whether a fragrance is a fougère. Where family words appear in description copy, they appear as adjectives inside a sentence written to sell, not as a classification.

Nor will a note list help much. Only 61 of our 3,956 listings publish a full top, heart and base pyramid — about 1.5 percent — and 2,814 carry no note text at all. Of the 1,142 that mention materials, lavender appears in 200, which puts it seventh on the list of most-mentioned materials behind bergamot and rose at 334 each, musk at 316, amber at 283, jasmine at 267 and vanilla at 201. Coumarin does not make that list at all, because coumarin is not a word a box uses. It hides behind “tonka bean.”

The practical method is therefore the same as it is for everything else in this subject: smell for the structure. Spray one wrist, wait twenty minutes past the citrus, and ask whether the sweetness arriving underneath is hay or is caramel. Myths worth correcting

“A fougère smells like ferns.” Ferns have essentially no smell. The family is named after an imagined fern, not a reproduced one.

“Fougère means men’s fragrance.” It describes a structure, not a gender. The structure has been marketed overwhelmingly to men for a century, which is a fact about marketing.

“Coumarin has been banned.” It has not. The IFRA Standard is a restriction, and for fine fragrance the ceiling is 1.5 percent — above the 0.01 to 0.8 percent range IARC records as typical use. Coumarin is in current production and in very wide use.

“Coumarin is a synthetic, so a natural fougère is possible.” Coumarin occurs naturally in lavender, tonka bean, sweet clover and several other plants, and it is also made industrially. “Fougère Royale was the first perfume to use a synthetic.” It is generally credited as the first to be built on one commercially. Coumarin was isolated in 1820 and synthesised in 1868, both before 1882.

“Modern fresh masculines are not fougères.” Most of them are, structurally. The lavender has often been softened and the moss reduced, but the lavender-coumarin spine is usually still there under the marine materials.

The honest limits of this article

The 1882 date, Paul Parquet’s authorship and the claim to have founded a family all come from Houbigant’s own current product page. That is a brand statement about its own heritage, published more than a century after the event, and it should be read as such. We have cited it because the house is the only party with any standing to make the claim, not because it constitutes independent evidence.

The coumarin chemistry is much better sourced: the 1820 isolation by Vogel, the natural-source list including lavender, the synthesis routes, the 1999 manufacturer count and the 0.01 to 0.8 percent use range all come from IARC Monographs volume 77, published in 2000. That use range is therefore a figure from 2000, may not describe current practice, and covers soaps, detergents, lotions and perfumes collectively rather than fine fragrance alone. Perkin’s 1868 paper is a real primary document in the Journal of the Chemical Society; we have its title, journal, year and DOI from the Royal Society of Chemistry’s own record, and we did not read the paper itself. At fact-check the RSC record returned a 403 to a second attempt, so the attribution rests on that record plus a peer-reviewed 2022 review in Inorganics which states that “The coumarin synthesis was first described by Perkin in 1868”. We give no forename and no volume or page number, because neither was confirmed.

The IFRA figures were read directly from the Standard document for coumarin, which is dated 2020 and identified as Amendment 49, and from the Standards index published with the 51st Amendment. IFRA notified the 51st Amendment on 30 June 2023 and that amendment is currently in force. The 52nd is in progress: IFRA’s own end-of-consultation notice, published 31 August 2026, records that its consultation closed on 12 June 2026 and that notification is expected in January 2027, with compliance 11 months after notification for new creations and 30 months for existing ones. IFRA Standards are industry self-regulation, not law.

No perfumer is named in this article except Paul Parquet, and only because Houbigant names him for its own fragrance. No perfumer is credited for any other fragrance mentioned, because we could not corroborate any attribution to a brand statement, an award citation or named trade reporting. Leaving a composition unattributed is the correct outcome.

No formula percentage is asserted for any named fragrance. The 1882 formula is not public and no modern one is either. The four-era table is an editorial framework — a useful way to organise how the structure has been rebuilt — not a classification anyone else publishes. Every smell description is our characterisation, written from experience of the materials, and should be read as one.

What our own catalogue shows

Two counts were requested for this section and neither exists, which is itself the answer to the question of how you find a fougère in a catalogue.

We hold no count of listings that use the word “fougère” or “fougere”, and none of listings that use “aromatic”. Family and register words are not fields; they turn up inside description sentences when a copywriter reaches for them, and nothing in our data counts them. Nor can we count listings that mention lavender and tonka bean together, or listings that name coumarin at all. Lavender is the one element of the structure that is countable, and its count is above. Tonka and coumarin are not in the counted vocabulary, so the two halves of this accord cannot be counted together even in principle.

That is worth sitting with rather than apologising for. A fougère is a structure, not a note list, and the structure is written down nowhere on the page. The nose test earlier in this article is not a fallback for missing data. It is the only method there is.
